Banana Nut Bread (2 of 115+)

Banana Nut Bread

  • 6 Tbs. unsalted butter, at room temp
  • 1 cup sugar
  • 2-3 very ripe bananas (mashed)
  • 3 eggs, lightly beaten
  • ½ cup buttermilk
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp nutmeg
  • ½ tsp salt
  • ¾ cup walnuts (optional)

Preheat oven to 350 and grease loaf pan.

In a stand mixer beat together sugar and butter until creamy. Add bananas and eggs and beat until smooth. Add the buttermilk and beat just until combined.

In a separate bowl sift together flour, baking soda, salt, nutmeg and baking powder. Add the flour mixture to the mixer on low and mix until combined.

Pour into greased loaf pan about ⅔ full. Bake until dark golden brown @ 55-60 minutes.
