This is a great base muffin mix to be used with any filler or add-in.
- 1 egg
- ⅔ cup milk
- ¼ cup vegetable oil
- 1½ cups flour
- ½ cup sugar
- 2 tsp baking powder
- 1 tsp vanilla extract
- ½ tsp salt
Mix egg, oil & milk in a large bowl. Sift flour, salt, baking soda, & sugar into the egg mixture and mix just until combined. Do not overmix.
Scoop a little into muffin pans. With a teaspoon drop your favorite jelly or jam into each muffin cup. Add a little more muffin batter on top and bake for 20 minutes.
*Can also be done with ⅔ cup chocolate chips for Chocolate Chip Muffins (no jelly)
